About the Author
"A creative chef, Alex Atala is known in Brazil and throughout the world for exploring, through classical techniques, the gastronomical possibilities of Brazilian ingredients. Atala began his career when he was 19 in Belgium, at the Ecole Hoteliere de Namur. In France he worked at Jean Pierre Bruneau’s Michelin 3‐star restaurant, and staged at Hotel de la Cote D’Or with Chef Bernard Loiseau. In 1994 he returned to São Paulo, where his performance in several establishments around the city attracted the attention of journalists and gourmands. He opened D.O.M. restaurant in 1999. In 2009 Atala opened his second restaurant, Dalva e Dito, to critical acclaim."

Bought the book bc i admire alex's attitude towards life, book has some small insights into his mind but is manly a picture book with recipes that r simplified so u never have a hope of repeating them if ur not formilar with the flavors or a profesional who understands taste. Also upsetting some parts of plate r not on the recipe, you r left to asurtain urself wat it is. All in alll a good book but not worth price tag
A gorgeous coffee-table book about a fascinating chef. Plus recipes that, while I am not going to try to find the actual Brazilian ingredients, will inspire me to try the combinations and techniques with my own locally available ingredients.
Please note right off the bat: It's about Brazilian ingredients. You won't be able to find some of them at the Piggly Wiggly, to say the least. Also note that the author is taking very traditional ingredients and exploring in a very modern way. This isn't a collection of peasant food from the Amazon. Having said all that, it's beautiful, from the food shots to the colorful street scenes. This makes me want to run to Brazil and discover the food for myself, both in this modern setting and in the streets.I almost gave the book 4 stars because it's going to be so impractical to cook a lot but that's not the author's fault. What he's done is excellent and inspirational. And there things you can cook and be inspired by so if you are ready to expand your horizons, I can't think of a happier way except to eat!
This is a "cookbook,"... yes. There are recipes. But those recipes come from the professional kitchen of D.O.M. Restaurant, widely considered to be one of the finest restaurants in the world. This is some pretty high-end cuisine. The ingredients, the equipment, the techniques required for many of these dishes are beyond most home cooks, beyond most professional chefs in fact. Some of the ingredients are simply unobtainable outside of Brazil.So why would one want this book? Well, so-called "food porn," is one answer; we can all dream. But as Phaidon's books usually are, this book much more than a cookbook. This is as much, perhaps, more of a coffee table book than a kitchen table book. The book is physically large and chock-a-block full of beautiful, lush, artistic pictures of Brazil and Brazilian culinary and agricultural cultures. Chef Atala shares some recipes, but more than that he tells the history and the stories behind those recipes and ingredients. This is a book to read and to learn from as much as to cook from.
Beautiful book! Probably the best book on Brazilian Cuisine out there.
So creative and inspiring!
Having recently dined at D.O.M., I asked Alex which of the dishes I had been served were in the cookbook. He looked at my ticket and rattled off the handful of recipes I should look for. So when I received this cookbook I was thrilled to see the recipes were reasonably doable even by a cooking lummux in Virginia like myself. Particularly the Heart of Palm Fettuccine with popcorn dust was amazing and the recipe was absolutely doable by a novice.Keep in mind this cookbook does not hold your hand and assumes you know quite a lot about cooking in general. And since its about rediscovering Brazilian ingredients, you have to be prepared to not be able to find some of the things listed. Even if you live in Brazil. That's the point.
